Things are looking up

In Switzerland things are looking up. Since the 3rd quarter of 2017 the Top 27 foodservice providers on our Food Services League Table for the out-of-home market have seen a silver lining on the horizon, after the “Swiss Franc Shock” had been hampering economic development for a number of years. The upward growth in sales revenue demonstrates this: in 2017 the Top 27 saw their earnings rise by 2.0% to Swiss Francs (CHF) 4.9 bn, previous year: CHF4.8 billion.

Great at the Top

In economic terms Switzerland is struggling with various challenges. The Swiss ’Frankenshock’ of 2015 is still having an impact. Regions near the borders are feeling this keenly, because (among other problems) demand for retail and food services is emigrating to neighbouring countries. In 2016 the holiday districts also saw their overnight-stay figures fall (-0.3%); Switzerland is continuing to lose market share in the international tourist trade. Significantly above the industry level, on the other hand, comes the trend among the top 25 biggest food-service suppliers (excluding hotel business), which in 2016 saw its revenues climb by 2% compared with 2015. An exclusive league table from our sister magazine food-service.

Trendsetter from Switzerland

Two Spice AG of Zurich plays in the top league of the Swiss restaurant industry. The multi-concept company unites 23 businesses and ten different brands under its roof and in 2016 earned revenues of almost CHF 80 m. Market Leaders Battle On

When on 15 January 2015 the Swiss National Bank discontinued its support of the Swiss franc, it brought about immediate and enormous economic change. First and foremost it was companies located near the border who were particularly impacted by the consequences of the increased value of the currency and this included the food and gastronomy sector. Nevertheless, the 25 largest foodservice providers (excluding the hotel industry) saw a small increase in sales of 0.4% in 2015 compared to 2014. This was all the more notable since it followed a big increase in the previous year (+3.9%) in what is an ailing food and gastronomy market in Switzerland with the Swiss economy stagnating overall. Ranking data prepared exclusively by our sister ‘food-service’ publication.

Radically Fresh

Marché not only invented the 'market restaurant' category at the beginning of the 80s, thus inspiring the progress of multi-unit catering throughout the whole of Central Europe. Now represented in twelve countries and on three continents, this Mövenpick off-shoot has also become the most widely distributed player in its field. The key is simple: the promise of freshness. www.marche-international.com

4 bn Mark Passed for the First Time

With a net turnover of CHF4,009 bn (EUR2.5 bn), the 22 largest foodservice providers in the land of the Matterhorn (without hotel trade) achieved exactly 6.3% more revenues in 2008 than in the previous year (2007: +3.9%). These were the best growth figures for the top-end of the sector since 2000. And the forecast for 2009 promises a further increase. The top 3 players are Migros, McDonald's and SV.

High Prices and Rigid Structures

Switzerland 2004: the 22 biggest companies in the foodservice sector (excluding hotels) rang up total revenues of CHF3.5 bn (EUR2.3 bn), a mini-increase of 0.8% over the previous year, which itself ended with a minus of 2.7% for the sector. And, once again, at least every second questionnaire contains the words 'a difficult market'. Things just don't seem to want to pick up significantly. Declines (yet again) for Mövenpick, Autogrill and Gate Gourmet.

No Sign of Euphoria

Switzerland 2003: the 20 biggest companies in the foodservice sector (excluding hotels) rang up revenues of almost CHF3.5 bn/EUR2.2 bn, excluding VAT, a decline of 2.7% over the previous year. Gate Gourmet, Migros, Mövenpick and Autogrill returned the biggest drops in absolute terms. The highest rate of growth came from Compass while McDonald's failed to beat the previous year's results for the first time. Positive expectations for 2004.

The Market Is Saturated

Switzerland 2002: The 25 biggest companies in the foodservice sector (excluding hotels) rang up sales of CHF3.7 billion excluding VAT, an increase of 2.1% on the year before. However, the twelve months were characterised by significantly declining sales for three big players, Mövenpick, Gate Gourmet and Autogrill. The highest growth was recorded by Compass (Restorama take over), Migros (Expo.02) and McDonald's (expansion).

Grounding Year

Switzerland 2001: the top 25 (26) companies in the foodservice sector (excluding the hotel trade) report revenues of CHF3.79 billion (net) - a decline of 0.1% on the year before. The 12 months were better than these figures show at first sight because the two biggest players - Autogrill and Gate Gourmet - pull down the figures with extremely high losses. The winners in terms of revenues were Compass and McDonald's.
