Denmark

When Government Interferes

Denmark is the smallest of the Scandinavian countries, with just 5.2 million inhabitants. The country is densely populated more so than the other Scandinavian countries but considerably less than e.g. the U.K. or Holland. It does not have a culinary tradition to match France or Italy. From a foodservice point of view the two main focus points are the capital of Copenhagen and the city of Århus. For the foodservice professional Denmark is interesting from two points of view. It is a good example of what can happen to an industry when government interferes with market forces and on a more positive note Danish foodservice professionals are masters of efficiency - continuously finding new ways to keep the direct labour component as low as possible. Large Fragmentation

The oldest monarchy in the world, the Kingdom of Denmark, is the smallest of the Nordic countries in terms of total area. However, in terms of population (5.3 million) and GDP, it is the second largest after Sweden. Apart from the Jutland peninsula, Denmark is a patchwork of islands, connected by a network of road-and-rail bridges, tunnels and ferry routes. About one third of the population live in the capital, Copenhagen, and the surrounding areas.There are approximately 14,000 foodservice outlets in Denmark with total sales of around EUR 2.9 billion excluding VAT. Regardless where you look in Europe, or the whole world for that matter, the leisure business is booming. And the theme parks are noticing this, too. The higher, the faster and the more exotic the attractions, the greater is the interest shown by visitors both young and old. Foodservice alone is not an attraction. However, it accounts for 20 to 35% of receipts after admission charges and thus plays the most important supporting role. Hand-held snacks and soft drinks are the best sellers.
