    A City on the Move

    Greece is a destination with one of the largest numbers of visitors in the EU, and tourism is a huge proportion of GDP (see panel). In this region of bright sunlight, eating habits are still close to the land: street-markets supply lots of fresh fruit and vegetables, and Greeks are as likely to go to them as they are to shop at the supermarket - even in the city. Against this background, the restaurant sector has evolved in jumps and starts. Where twenty years ago, the main offering was still the local taverna, a big growth of fine-dining and mid-price independents has extended the range, especially in Athens. Now people are demanding good quality at better prices than has been the case. Chains and small groups with one or two outlets are rushing to provide the right mix of style, quality and value. At the same time, the grazing habits of people, especially in the city, are opening the door to an international food and drink culture based on the right thing for the right time. Young Athenians hang out, late into the night, in smart new coffee bars like Flocafé. The growth of eating on the hoof, and the Greek taste for excellent pastries to go, both offer opportunities in the carry-out market. Traditional stores are expanding their range - some going organic - and new concepts are creating a clever niche. So Athens is a city on the move. Not just towards the big event of next year, but on to a new cosmopolitan atmosphere and attitude. Good food in pleasing surroundings, light selections to eat at your convenience - all this can be found in a country riding high on its rich history and dramatic sense of occasion. By Matt Spencer.
