Bakery Cafes

Comfort Food from the Oven

Bread is a staple food in many European countries. Although its traditional variety makes it a very important cultural good, it was subject to the mechanisms of industrialisation over past decades and Europe’s bakers lost a large part of their market to supermarkets and discounters. At the same time, an increasingly mobile society demanded both more and more hand-held snacks and take-aways on the one hand and cosy locations where they could feel at home on the other. Thanks to their baking expertise, bakers can satisfy both needs by adopting a more foodservice-oriented position and profile. Accordingly, bakery cafés rank among the rising gastronomic stars of the last decade. Part 2 of our pan-European survey.

Cosmopolitan, Affluent & Buoyant

Apart from New York, no other North American city can boast such a potpourri of people. Today, more than 40% of Toronto’s 2.5 million inhabitants are not of Anglo- Saxon descent. Canada’s biggest and fastest-growing agglomeration in terms of population, the city on Lake Ontario, is also the country’s financial centre. Thanks to an extremely robust and flourishing economy, Toronto has been booming for many years, as shown by the numerous, high-grade construction projects. And one of the beneficiaries of this dynamism is the hospitality sector. In this portrait, we take a closer look at the city’s multi-faceted foodservice scene. MW

Consumer Research

Far from Homogenous

You can't help but stand in awe of the way the foodservice industry around the globe serves the needs and tastes of consumers. Through one lens it all looks the same: tables and chairs, kitchens, waiters, cheques, counters, display... so many common elements. Through another lens the differences within that basic structure are obvious. Pricing, foods, and service vary across and within countries to create great experiences for the tastes of local customers. Market research in 10 countries by Bob O'Brien. www.npdgroup.com

Welcome back to Canada

It was back in the 90s, shortly after its 10th birthday, that Mövenpick's Marché subsidiary felt the urge to branch out into the big wide world. During the peak phase of expansion, the pioneer of market restaurants could boast around 20 outlets in Canada. In 1996, Marché handed over its entire Canadian business to a licensee before withdrawing completely from this national market in 2004. Now, the brand is back - with a vengeance and big plans. In the medium term, the Swiss company aims to open ten restaurants and generate revenues of a good CAD30 m (EUR 22 m). The comeback is being managed without franchisees. A decisive component, as shown by the re-launch in Singapore in 2007.
