    A Recession-Proof Concept

    La Pataterie, the first table-service restaurant franchisor in France, opened its 200th restaurant in Villabé in the department of Ile de France on 26 May this year. This new establishment has kept all the chain’s fundamental features: a location on the outskirts of a medium-sized town in the greater Paris region or in the provinces, an authentic décor based on a theme of ‘Grandfather’s farm’ and a moderate average bill, in order to create a loyal customer base amongst the working public during the week and among families at weekends. And, of course, the menu is centred on the potato, offering seven dishes at less than Euro 6.95, both at lunchtime and in the evening. Lydie Anastassion reports.

    Best Food, Relaxed Mood

    Décontracté. A French word for a modern lifestyle: relaxed, laidback, casual. Till recently none of these terms had anything to do with the places you go to eat the best food available. Young people - interested in food - would hesitate, even if they had the means, to book a table at a two or three star haute cuisine temple. To bring in a new generation of enthusiasts for top cooking, finally top chefs have taken the lead. Breaking out of their whites, to dress in black (Joël Robuchon) and bringing the kitchen into the dining room (Robuchon and Alain Dutournier in France, Paul Heathcote in the UK) these chefs are out to present theatre, to interact - and to have their staff interact - with those who come to eat their food.     The New Horizons of the Groupe Flo

    It is now one and a half years since the Groupe Flo emerged from the stormy financial waters in the wake of the acquisition of Bistro Romain in June 2000 and the combined effects of the mad cow disease crisis and the terrorist attacks of 11 September. The group has strategically refocussed on themed restaurants in three areas: its traditional brasseries, and the two chains, Hippopotamus and Bistro Romain. On an international level, all three concepts are being developed as part of the relaunch, but Flo is principally pushing the Hippopotamus brand in its efforts to conquer the Chinese and Middle-Eastern markets.     Prepared for a European Offensive

    Twenty years after launching the Buffalo Grill on the RN 20 at Avrainville south of Paris, Christian Picart's Group now comprises 173 restaurants and has achieved sales revenues of Z 365.9 million. 1997 marked the start of the international development of this chain of steakhouses. Starting with Europe, Buffalo Grill established itself in Spain and plans to penetrate Belgium and Switzerland this year. The group's flotation on the Second Marché of the Stock Exchange in Paris - to take place before the end of 1999 - is also likely to encourage the planned expansion.
